As always, the key is the details:
Start with fresh beef – if it has ever been frozen, texture and moisture content suffer
Make sure it’s Certified Black Angus Beef, i.e. C.B.A. (not just generic Black Angus – most beef sold in the USA is already from that breed – CBA, the only kind Elmo’s uses, is an American Angus Association brand with far higher standards)
Check the marbling – the more, the better
Then, coat with plenty of fresh herbs, and place in a 500 degree oven; after caramelizing the outside to a beautiful crust, lower the temperature and slow roast to medium rare.
